Ingredients

2 cups sugar (400 g)
1 ¾ cups flour (220 g)
¾ cup cocoa powder (75 g)
1 ½ tsp bicarbonate of soda (7.5 ml / baking soda)
1 ½ tsp baking powder (7.5 ml)
1 tsp salt (5 ml)
2 eggs
1 cup milk (240 ml)
½ cup sunflower oil or any neutral oil (120 ml)
2 tsp vanilla essence (10 ml)
1 cup boiling water (240 ml)

Instructions

    • Preheat your oven to 180°C (350°F).

    • Grease two 9-inch (23 cm) cake pans and line with baking paper/wax wrap.

    • In a large bowl, stir together: sugar, flour, cocoa powder, bicarbonate of soda, baking powder, salt

    • Next Add: eggs, milk, oil, vanilla

    • Mix using a hand or electric mixer for about 3 minutes until smooth.

    • Carefully stir in the boiling water. (The batter will be thin—this is normal and what makes the cake moist.)

    • Pour the batter evenly into your prepared pans.

    • Bake for 30–35 minutes or until a toothpick comes out clean.

    • Let the cakes cool in the pans for 10 minutes before removing.

    • Cool on a wire rack and decorate with your choice of icing/frosting.

    • This cake sponge is soft, moist and dense. Use soft and/or fluffy icings/frostings to prevent the cake from breaking.
