Ingredients
75 g butter (⅓ cup / 2.6 oz)
300 g dark chocolate, chopped (10.5 oz)
3 eggs
¾ cup sugar (150 g / 5.3 oz granulated sugar)
1 tsp vanilla essence (5 ml / vanilla extract)
½ tsp salt (2.5 ml)
1 cup chopped walnuts or pecans (120 g / 4 oz)
1 cup flour (125 g / 4.4 oz all-purpose flour)
Instructions
Preheat your oven to 180°C (350°F).
Melt the butter and dark chocolate together in a heatproof bowl.
Allow to cool slightly.
In a separate bowl, beat together: eggs, sugar, vanilla and salt
Add the melted chocolate mixture and mix gently.
Add the flour and nuts, and mix just until combined.
(Do not overmix—this keeps the brownies fudgy.)
Pour the batter into a greased and lined baking pan (20–23 cm / 8–9 inch).
Bake for 20 minutes, or until the edges are set and the centre is still slightly soft.
Allow to cool before slicing.
Optional: Thick Chocolate Ganache Topping
For extra indulgence, top your brownies with a simple ganache:
100 g milk chocolate (3.5 oz)
2 tbsp cream (30 ml / 2 tablespoons heavy cream)
Melt together in the microwave and mix until smooth, then spread over the brownies.
